Mediterranean Chopped Vegetable Salad

This Mediterranean chopped salad is fresh, colorful, and bursting with flavor. Everything is finely chopped so you get a perfect bite every time. It’s light, healthy, and ready in 10 minutes.

Ingredients (Serves 3–4)

  • 2 ripe tomatoes, finely chopped
  • 1 large cucumber, finely chopped
  • ½ red onion, very finely chopped
  • ½ cup bell pepper (any color), chopped
  • ¼ cup fresh parsley, finely chopped
  • 2 tablespoons fresh mint, chopped (optional but traditional)
  • ¼ cup olives, chopped (black or Kalamata)

Dressing

  • 3 tablespoons extra-virgin olive oil
  • 1½ tablespoons lemon juice (or red wine vinegar)
  • Salt, to taste
  • Black pepper, to taste
